Reese's Krispie Treats


Don't you love when you finally get around to making one of those recipes that you've had pinned or bookmarked for several months, especially when it's a really good one? This is one of those for me and I'm telling you I shouldn't have waited this long to try it. 
These remind me a lot of Scotcheroos (if you've ever had those) but without the butterscotch flavor and rather more peanut butter flavor thanks to the topping of those ever so amazing Reese's Peanut Butter Cups. I love Scotcheroos but I'd have to say I like these even more. These incredible easy to make treats are chewy, crunchy, deliciously sweet, perfectly peanut buttery along with just the right ratio of chocolate (to mimic the flavor of the Reese's) and then they are finished of with the crowning jewels, the melt in your mouth Reese's Peanut Butter Cups. All that and it's destined to make one highly addictive, not to be forgotten treat. This is one you'll want to pin and try in the very near future. Reese's Krispie Treats
Yields 12 squares

Ingredients:
1 cup light corn syrup
1 cup granulated sugar
1/4 tsp salt
1 cup peanut butter
1/2 cup semi-sweet chocolate chips
1 tsp vanilla extract
4 1/2 cups Rice Krispies Cereal
6 regular size Reese's Peanut Butter Cups, each diced into 8 pie shaped wedges

Directions:
In a medium saucepan, combine corn syrup, sugar and salt and bring mixture just to a boil over medium heat, whisking constantly (to dissolve sugar). Once mixture reaches a boil, reduce heat slightly and allow to gently boil for 1 minute. Remove from heat, add in peanut butter, chocolate chips and vanilla, stir mixture until chocolate chips have completely melted. Pour in Rice Krispies Cereal and toss mixture to evenly coat. Pour mixture into a buttered 8x8 (or 9x9) baking dish and gently spread and press into an even layer. Allow to cool until just warm to the touch then evenly distribute diced Reese's Peanut Butter Cups over top and lightly press them onto the coated cereal. Enjoy warm, with ooey gooey melted chocolate topping (my favorite, I love melted candy bars though =) or cover and refrigerate until chocolate has set, then remove from refrigerator and rest about 10 minutes at room temperature and cut into squares. Store in an airtight container.

Muddy Buddy Rice Krispie Treats


Two of my all time favorite treat are Muddy Buddies and Rice Krispie Treats. Who doesn't love the both of them? I've been making each of them since I was little and I could barely reach the counter to prepare them. Recently I was thinking rather than always having to choose one over the other I would just combine the two into one, because after all they both begin with rice cereal so they do have something in common. Let me just say these are seriously delicious! Now you, like me, wont have to choose one treat over the other, with these you get two in one. Got to love that! Enjoy!


Muddy Buddy Rice Krispie Treats
Yields 16


Ingredients:
1/4 cup butter
1 (10.5 oz) package miniature marshmallows
6 cups Rice Krispies Cereal


1 cup milk chocolate or semi sweet chocolate chips (I like milk chocolate chips)
1/2 cup creamy peanut butter
1 tsp vanilla extract
1/4 cup powdered sugar


Directions:
Butter a 13x9 baking dish, set aside. Melt butter in a large saucepan over medium low heat. Add in marshmallows and cook, stirring constantly until marshmallows have melted. Remove from heat and stir in Rice Krispies Cereal. Pour Rice Krispie Treats into prepared baking dish and spread into an even layer using a buttered spatula.
In a microwave safe bowl, combine chocolate chips and peanut butter. Microwave mixture on HIGH power in 30 second intervals stirring after each interval until melted and smooth. Stir in vanilla. Pour melted chocolate mixture over Rice Krispie Treats and spread into an even layer. Using a fine mesh sieve, sprinkle powdered sugar over chocolate layer. Cut into squares, store in an airtight container.

Chocolate Sugar Cookies with Peanut Butter Frosting (taste like Reese's)


Cookie dreams come alive with these delicious, indulgent cookies.  Traditional sugar cookies meet chocolate (pure cocoa powder) then are spread with a fluffy peanut butter frosting for one incredible cookie that tastes just like a Reese's!  These cookies have one of the best flavor combinations, chocolate and peanut butter.  They go together like salt and pepper.  They were made to be together.  If you love chocolate or peanut butter, and especially Reese's Peanut Butter Cups then these are the cookie for you!  
I love switching up the flavors on the traditional sugar cookie, because who doesn't love a frosted sugar cookie?  I started with the Original Bakery Style Sugar Cookie, then the Sugar Cookie Squares and then a real switch up with Cornbread Sugar Cookies with Honey Butter Frosting (also in Squares).  I also have more combinations in mind, so stay tuned for more sugar cookie posts in the future =).  




Chocolate Sugar Cookies with Peanut Butter Frosting
Yields nearly 2 Dozen


Ingredients:
2 cups all-purpose flour
1/2 cup cocoa powder
1/2 tsp baking powder
1/4 tsp baking soda
1/2 tsp salt
1/2 cup granulated sugar
1/2 cup light-brown sugar
9 Tbsp butter, softened (1 stick + 1 Tbsp)
2 Tbsp sour cream
1 large egg
1 large egg yolk
1/2 Tbsp vanilla extract
1 Recipe Peanut Butter Frosting, recipe follows
Chocolate Nonpareils (optional, but I'd say a fancy must =)


Directions:
Preheat oven to 350 degrees.  In a mixing bowl, whisk together, flour, cocoa, baking powder, baking soda and salt, set aside.  In the bowl of an electric mixer, whip together granulated sugar, brown sugar, butter and sour cream until light and fluffy about 3-4 minutes.  Stir in egg, egg yolk and vanilla.  Slowly add in dry ingredients and mix until incorporated (dough will be thick).  Scoop dough out 2 tablespoons at a time and form into balls.  Place balls onto greased cookie sheets and evenly flatten to about 1/2 inch thick using your hands.  Bake in preheated oven 9 - 10 minutes.  Allow to cool completely before frosting.  Frost with Peanut Butter Frosting and top with Chocolate Nonpareil Sprinkles if desired.


Peanut Butter Frosting


Ingredients:
1/2 cup creamy peanut butter
3 Tbsp butter, softened
1/2 tsp vanilla extract
1/8 tsp salt
1 1/2 cups powdered sugar
3 - 4 Tbsp milk


Directions:
In a large mixing bowl, using an electric mixer, whip together peanut butter, butter, vanilla and salt until smooth.  Stir in powdered sugar and milk (begin with 3 Tbsp then add 1 additional Tbsp milk later if desired), and blend until smooth and fluffy.

Peanut Butter Pretzel Rice Krispie Treats


Aren't Rice Krispie Treats one of the greatest treats of all time?  Indeed they are, and their possibilities for alternate variations are endless.  I have so much fun creating new flavors of Rice Krispie Treats because it's so simple to do and they are always incredibly easy to make,  not to mention how quickly you can be enjoying a flawlessly delicious dessert in no time.  
These treats are perfect for snacking or dessert and they are even fancy enough for parties.  It's always a delight for people to enjoy a new twist on one of their favorite treats.  Can you ever go wrong adding peanut butter to treats and desserts?  Then, you add in even more flavor with the slightly salted pretzels, smooth, rich chocolate and a hint of pure vanilla.  These are an exciting party for you mouth.  They are everything I'd imagine a gourmet candy bar to be.  Lets just say, WARNING: Highly addictive.

Peanut Butter Pretzel Rice Krispie Treats
Yields 20 squares


Ingredients:
1/4 cup butter
1 (10.5 oz) package miniature marshmallows
1/2 cup creamy peanut butter
1 tsp vanilla extract
4 1/4 cups Rice Krispies Cereral
1 1/2 cups coarsely crushed pretzel pieces


Topping:
1 cup milk chocolate chips
2 Tbsp creamy peanut butter
1/4 cup coarsely crushed pretzel pieces


Directions:
Butter a 9x13 dish, set aside.  Melt butter in a large non-stick saucepan over medium-low heat.  Stir in marshmallows and cook, stirring constantly until marshmallows have melted.  Remove from heat and stir in 1/2 cup peanut butter and vanilla.  Pour Rice Krispies Cereal and 1 1/2 cups coarsely crushed pretzel pieces in to melted marshmallow mixture and gently fold mixture until cereal and pretzels are evenly coated.  Spread mixture evenly into prepared 9x13 dish and spread into an even layer with a butter spatula.
Melt chocolate chips with 2 Tbsp peanut butter in a microwave safe bowl, in 30 second intervals stirring after each interval until melted and smooth.  Pour melted chocolate mixture into a piping or ziploc bag, snip the tip of the end and drizzle mixture evenly over Rice Krispie Treats.  Sprinkle evenly with 1/4 cup coarsely crushed pretzel pieces, enjoy immediately with melted chocolate topping or cover and refrigerate until set for a set chocolate topping.

Peanut Butter Bite Size Cookies


Are you looking for a moist peanut butter cookie recipe? A lot of peanut butter cookie recipes out there make a dry peanut butter cookie and who wants a dry cookie? These peanut butter cookies are so moist and delicious, how is it a cookie can seem to melt in your mouth? These cookies are bite size so you don't have to feel guilty about eating 3 or 4 or even 5! It's amazing such a small cookie could pack so much flavorful punch! Go make them, now! =)

Peanut Butter Bite Size Cookies
Yields about 3 dozen

Ingredients:
1 1/3 cups all-purpose flour
1 tsp baking soda
1/4 tsp salt
1/2 cup unsalted butter, softened
2/3 cup creamy peanut butter
1/2 cup granulated sugar
1/2 cup packed light-brown sugar
1 large egg
1 tsp vanilla extract

Directions:
Preheat oven to 350 degrees. Butter a cookie dish. In a small mixing bowl, whisk together flour, baking soda and salt, set aside. In the mixing bowl of an electric mixer, mix together butter, peanut butter, granulated sugar and brown sugar until light and fluffy. Stir in egg and vanilla. Slowly add dry ingredients. Scoop out 1 even tablespoon of dough at a time and roll into a small ball. Set dough balls on greased baking sheet and bake 7 - 9 minutes.
