Homemade Tortillas - White and Whole Wheat Recipes


If you ask me, made from scratch Mexican food is just about as good as it gets. I've mentioned before that Mexican and Italian food are my two favorite kinds of food. One thing I love about each of them (other than the number one reason - the incredibly delicious flavors) is their use of so many fresh ingredients and how a lot of it is made from scratch. I've been to Mexico just a few times and one of my favorite things there was always the fresh tortillas. I loved stopping by the market to get a bag filled with a large stack of fresh flour tortillas from the bakery (I loved the fresh churros they have too, mmmm). I could probably eat that whole stack in one sitting.
These may seem like one of those things that's not worth the time and effort but I'm telling you, it is! I just don't like the flour tortillas from the store that are pre-made and loaded with preservatives, they just taste weird to me. Once you've had fresh tortillas, you know what I mean when I say homemade and store-bought aren't the same thing at all. There is the uncooked version you can get in the refrigerated section of the grocery store (which is what I use when I don't have time to make them from scratch) which are undoubtedly so much better than those you get on the shelf. Then several steps up from those are the homemade version.
These tortillas are a definite highlight of a Mexican meal. They are a simple, yet incredible upgrade. The tortilla is the first thing your going to bite into after all, so it better be good right? Enjoy!

Homemade Tortillas
Yields about 8 10-inch tortillas (you can get more then this just roll them 6 or 7-inches for taco size shells)

Ingredients:
3 cups all-purpose flour

1 1/2 tsp salt
1 tsp baking powder
1/3 cup shortening or lard (or a combo of both)
1 - 1 1/4 cups very warm water
You'll also need large Ziploc bag

Directions:
In a large mixing bowl, whisk together flour, salt and baking powder. Using your hands, rub the shortening into the flour mixture until evenly distributed (mixture should hold its shape when clamped between your hands). Pour in 1 cup water and use a wooden spoon to stir until mixture comes together, adding additional water as needed (I used 1 cup + 2 Tbsp water). Knead mixture by hand until smooth (I just did this in the bowl). Divide mixture into 8 equal portions and shape each portion into a ball. Cover dough balls with plastic wrap and let rest at least 30 minutes and up to 1 hour. 
Roll each ball out on a lightly floured surface into a 10-inch circle (for a nice circular form flatten ball slightly then roll in one direction, make a  1/6 turn roll again, make another 1/6 turn and roll again. Continue to roll and turn until your dough circle is about 10-inches across). 
Heat a large non-stick skillet over medium high heat. Place rolled tortilla in hot skillet and cook until bubbles begin to appear on the surface, then flip tortilla to opposite side and cook until golden brown spots begin to appear on bottom. Immediately transfer cooked tortilla to a large Ziploc bag and seal bag (or tuck the opening underneath that way you wont keep on zipping and unzipping the bag as you work). Repeat process with remaining tortillas. Tortillas can be stored in an airtight container at room temperature for about 2 days or in refrigerator up to 1 week.

Homemade Wheat Tortillas
Yields about 10 10-inch tortillas

Ingredients:
3 cups whole wheat flour (or 2 cups wheat flour + 1 cup all-purpose)
1 1/2 tsp salt
1 tsp baking powder
3 Tbsp shortening
3 Tbsp canola, vegetable or olive oil
2 tsp sesame seeds, optional
1 1/4 - 1 1/2 cups very hot water
You'll also need a large Ziploc bag

Directions:
In a large mixing bowl whisk together flour, salt and baking powder. Using your hands, rub shortening into flour mixture until evenly distributed, about 1 minute. Add in canola oil and mix with your hands until evenly distributed. Mix in optional sesame seeds. Pour 1 1/4 cups hot water into mixture and mix with a wooden spoon until mixture starts to come together, adding additional water as needed, then knead by hand until smooth.
Divide dough into 10 equal portions and shape each portion into a ball. Cover with plastic wrap and let rest at least 30 minutes or up to 1 hour.

Chicken Tacos (Cafe Rio Shredded Chicken Copycat Recipe)



I will admit it, I'm a Cafe Rio/Costa Vida addict.  It's rare that I go more than a week without eating at one of the two. All their entrees are so full of exciting flavors that they keep me coming back for more. Since I eat there so frequently I thought maybe it's time to create another copycat recipe. One of my favorite things to get there is the shredded chicken salad or shredded chicken tacos, so here is my version of that chicken. 
This chicken is SO easy to make! If you haven't noticed, I love my slow cooker. You simply toss in a few ingredients along with some spices, and then allow it to cook low and slow all day while the flavors meld together and wallah! It almost seems to good to be true doesn't it? It does all the hard work. 
This Shredded Chicken recipe is not only to be used as a taco filling but also for burritos, enchiladas, salads, quesadillas, taquitos, etc. So, if you don't use it all the first night you make it you can use the left over chicken to make a different entree the next night, bonus! I hope you love this amazing shredded chicken that is so incredibly tender and filled with the prefect blend of flavors and spices. Shredded Chicken for Tacos


Ingredients:
2.5 lbs boneless skinless chicken breast halves
3/4 cup chicken broth
1/2 cup Zesty Italian Salad dressing
1 Tbsp fresh lime juice
1 Tbsp chili powder
2 tsp onion powder
1 tsp garlic powder
1 tsp paprika
1 tsp cumin
1 tsp salt
1/2 tsp freshly ground black pepper
1/2 tsp cayenne pepper, optional (adjust according to desired heat preference or omit)


Directions:
Place chicken breast halves in the slow cooker.  In a mixing bowl whisk together remaining ingredients. Pour mixture over chicken in slow cooker, cover slow cooker with lid. Cook chicken on low heat 6 - 8 hours. Shred chicken (it's so tender I usually just shred it in the slow cooker without even removing it), then cook shredded chicken in broth in slow cooker an additional 30 minutes on low. Drain broth from chicken. Serve warm in tacos, burritos, enchiladas, quesadillas, taquitos etc. Note: for taco filling ideas and how to cook corn tortilla shells see this post here.

Blackened Salmon Tacos with Corn Salsa and Cilantro Lime Ranch


If you haven't noticed yet Mexican food is my favorite.  Good Mexican food just bursts with exciting flavors that all blend so perfectly well together.  Nothing is bland, and it always keeps you craving it and coming back for more.  
My latest food craze is blackened salmon.  I've been getting it at one of my favorite local Restaurants almost weekly.  When I have a new food favorite I love to come up with my own version of it at home.  These tacos are bursting with enticing flavors that will likely have you making this dish many times around.  Soft tortillas are generously filled with tender, perfectly spiced salmon, then covered with a flavorful corn salsa, then it gets a delightful crunch from Romaine lettuce and another layer of flavor from a sprinkling of cheese and last but not least one of the best parts: it's drizzled with zesty cilantro lime ranch for one intensely incredible Blackened Salmon Taco!  Yum yum YUM!

Blackened Salmon Tacos
Yields 4-6 tacos


Ingredients:
2 (6 0z) salmon fillets
3 Tbsp olive oil, divided


2 Tbsp all-purpose flour
2 1/2 tsp chili powder
1 tsp paprika
1 tsp packed brown sugar
1 tsp onion powder
1/2 tsp garlic powder
1/2 tsp cumin
1/2 tsp cayenne pepper (optional)
1/2 tsp salt
1/4 tsp freshly ground black pepper


For Serving:
Flour or corn tortillas, warmed (for corn I'd recommend the fry cooking method I use here)
Chopped Romaine lettuce 
Cotija or Parmesan Cheese, grated/crumbled
Corn Salsa, recipe follows
Cilantro Lime Ranch, recipe can be found here

Directions:
In a shallow mixing bowl, using fork, combine flour, chili powder, paprika, brown sugar, onion powder, garlic powder, cumin, cayenne, salt and pepper.  Heat 2 Tbsp olive oil in a non-stick skillet over medium heat.  Baste salmon fillets with 1/2 tsp olive oil on each side and dip salmon into spice mixture and generously coat each side.  Place coated salmon in preheated skillet and cook 3-4 minutes per  side until outside is lightly blackened and center of fillet is cooked through and opaque.  Flake salmon using a fork.  Assemble tacos by dividing salmon among tortillas, top with lettuce, corn salsa, cheese, and drizzle with Cilantro Lime Ranch.  Serve immediately.


Corn Salsa


Ingredients:
2/3 cup frozen corn, warmed
1 medium Roma tomato, diced
1 small Avocado, diced
2 Tbsp finely chopped yellow onion
2 tsp lime juice
1 dash garlic powder
Salt and Pepper to taste


Directions:
Combine all ingredients in a mixing bowl.

Slow Cooker Pork for Tacos


Surprise!  Another slow cooker recipe from Cooking Classy =).  I can't help it, I love them!  They always yield such incredibly tender, flavorful meat.  The majority of the time I cook my meat for my main entrees in the slow cooker.  If you don't have one, you need one.  I bought mine for $30 (you can find it here for $34), I love it because the lid stays snug while cooking so all the liquids aren't steaming out all day and it's great for transporting.  I had to buy it recently because my other one exploded, yes exploded!  I did the dumbest thing ever.  I washed it then set it on the stovetop to dry, then apparently I turned on the wrong burner when I went to cook something and KABOOM!  It exploded because it was sitting on the hot, wrong burner I had accidentally turned on.  Talk about my dumbest kitchen moment ever, oops =).  Just glad no one got hurt, the breakage didn't go far.  Sorry, I got sidetracked with that, onto the dish...
This recipe is amazingly simple and so versatile.  The pork can be used for tacos, enchiladas, burritos, quesadillas, tamales, sopas, taquitos, empanadas, salads, tortas, tostadas, mexican pizzas okay, okay you get the idea.  Did I mention it contains only 3 ingredients!  Talk about quick and easy.  This meal is likely to become one of your go to favorites, not just for it's simplicity but for its phenomenal, enticing flavors!  It will have you coming back for more and more... and more.

Slow Cooker Pork for Tacos
Yields about 6-7 Servings


Ingredients:
2.5 lbs boneless pork spare ribs (look for some with less fat)
1 cup apple juice (don't worry this isn't "sweet pork", it just balances out the saltiness)
1 (1.25 oz) package taco seasoning (I use McCormick)


Directions:
Place pork spare ribs in the slow cooker, pour apple juice over spare ribs.  Sprinkle with half of the taco seasoning the flip spare ribs and season with remaining taco seasoning.  Cover with lid and cook on low for 8 hours.  Trim fat from pork and shred, return to slow cooker for an additional 20 - 30 minutes in taco seasoned broth.  Strain broth or remove pork with tongs or fork when plating.

Shredded Beef Taquitos


Please, no more frozen taquitos =).  I love these taquitos!  Perfectly crisp on the outside with flavorful tender beef on the inside.  Yum!  I like to have several dipping options when I make them, the three I always serve these with are guacamole, sour cream and fresh salsa but I also love these dipped in cilantro lime ranch (you can fallow the links below for the fresh salsa recipe and cilantro lime ranch recipe).  When I make guacamole I keep it simple, I don't like the chunks of onion in it so I always use powder.  I mash two ripe avocados with the juice of 1/2 a lime then add in 1/4 tsp onion powder and 1/4 tsp garlic powder then I season with salt and freshly ground black pepper, wallah so simple.  If you like Mexican food you will love these taquitos!  Also, if you are looking to get two dinners worth out of the beef (like I do by making tacos one night then taquitos the next) you could always buy a 4 pound roast and double the remaining ingredients (I still only use one can beef broth though).

Shredded Beef Taquitos
Yields about 15

Ingredients:
1 recipe Shredded Beef Tacos (beef portion only)
15 corn tortillas
Vegetable oil
Extra virgin olive oil (optional)
Toothpicks

Serve with optional:
Guacamole
Sour Cream

Directions:
Cook shredded beef according to directions.  Drain beef well, set aside.  Heat a non-stick griddle over medium high heat.  Cook tortillas for about 15 - 30 seconds on each side until soft and flimsy (can't think of a better word =).  Immediately remove tortillas to a plate in a stack and cover with a saucepan lid large enough to cover diameter of tortillas (this seals in moisture and helps them roll well without cracking).  Repeat this step until all the tortillas have been cooked.  
Fill a non-stick sauce pan with mixture of a few tablespoons vegetable oil and a few tablespoons extra virgin olive oil, it should be a layer of oil about 1/2 inch high (this is where the extra virgin olive oil is optional, you can use all vegetable oil, I just prefer both for flavor and health benefits).  Heat oil over medium heat.  
Remove one tortilla at a time, place about 1/4 cup shredded beef on tortilla in a line down the center of the tortilla.  Roll the tortilla snugly then insert a toothpick through the center so ends of tortillas stay in place.  Using metal tongs, gently place taquitos into hot oil (I usually fit 4 - 5 taquitos in at a time). Cook until lightly browned then remove toothpick, and using tongs, rotate taquito and cook opposite side until lightly browned.   Using tongs, remove from oil to a paper towel covered plate.  Add additional oil to pan as needed while cooking taquitos.  Serve warm with salsa, sour cream, guacamole or cilantro lime ranch for dipping.

Shredded Beef Tacos


These loaded shredded beef tacos are definitely at the top of my list of favorite foods.  This recipe for shredded beef tacos yields perfectly tender, wonderfully seasoned and flavorful beef.  I cook almost all my meat in the slow cooker because it basically guarantees tender meat, slow and low.  I've mentioned before Mexican food is one of my favorites.  Good Mexican food is never skimpy on flavors and its flavors are so distinct.  This recipe for shredded beef is so versatile. The beef can be used for tacos, enchiladas, taquitos or burritos.  That is one of my favorite things about this recipe.  It yields a lot of shredded beef, so I get dinner for more than one night out of it.  I usually always do tacos the first night then enchiladas or taquitos the next.  I love these tacos served along with Mexican rice and homeade refried or black beans.  It makes a meal fit to make someone believe they are dining at an amazing Mexican restaurant.  Did I mention how easy this beef is to make?  You've got to love that!

Shredded Beef Tacos
Yields about 6 - 8 servings

Ingredients:
1 (2.5 lb) chuck roast
1 (14 oz) can beef broth
1 1/2 Tbsp chili powder
1/2 Tbsp cumin
1/2 Tbsp onion powder
1 tsp garlic powder
1 tsp salt
1/4 tsp freshly cracked black pepper
Juice of 1 lime


Serve with:
Warmed corn tortillas or warmed fresh flour tortillas*
Romaine or Iceburg lettuce, chopped
Monterrey Jack or Cheddar cheese, shredded
Guacamole or diced avocados
Sour cream
Fresh salsa
Cilantro
Freshly squeezed lime juice
Hot sauce



Directions:
In a small bowl whisk together chili powder, cumin, onion powder, garlic powder, salt and pepper.  Place roast in a slow cooker, pour beef broth over roast then squeeze with fresh lime juice.  Sprinkle roast with spice mixture.  Cover slow cooker with lid and cook on low heat 8-10 hours.  Remove roast from slow cooker, shred beef (remove fat) and return shredded beef to slow cooker.  Cover with lid and cook additional 30 minutes.  Remove beef from slow cooker with tongs to remove juices when plating or drain in a colander.  Serve with desired toppings.  

I use two different kinds of tortillas when I make these tacos.  Most of the time I use corn tortillas but I also love these tacos using fresh flour tortillas.  For the corn tortillas, I heat a griddle over medium high heat then I make a mixture of a few tablespoons extra virgin olive oil and a few tablespoons vegetable oil, then I baste the oil mixture on the tortilla and cook each side until golden on each side.  Then move tortilla to a plate lined with a paper towels to soak up extra oil.
