Fruit Pastry Cake by Vanessa Tay


Ingredient

100g butter, softened at room temperature
150g caster sugar
50g low fat yogurt / sour cream
3 eggs, lightly beaten, room temperature
1 teaspoon pure vanilla extract
1 teaspoon lemon or orange zest
210g self raising flour
250g fruits *tossed with 2 tablespoon sugar*
(You can use strawberries, blueberries, peaches, bananas, oranges, pears, apples, pineapple, or any other fruits that are not too juicy. I omitted the sugar and used as much fruits, either fresh or canned, as needed to fill the top of the cake)

Method

Wash, cut (chunks or slices, as desired) and drain fruits, toss with sugar (if desired) and set aside. (if using canned fruits, wash the fruits to remove the syrup, omit the sugar)

Grease (with butter) and flour the side of a 9″ round pan or a 8″ square pan and line the base with parchment paper

With an electric mixer, cream butter, sugar and sour cream (or yogurt) till light and fluffy

Dribble in the eggs gradually and beat till incorporated in the batter. (The mixture may appear slightly curdled.)
Add vanilla extract and zest. Mix to combine

Sieve over flour, mix till smooth. (To avoid getting flour all over my work surface, I mixed the flour into the batter using a spatula, just a few strokes will do, then I used the electric mixer to mix the batter till smooth.)

Pour batter into prepared pan and smooth out the top with a spatula

Arrange fruits on top, don’t press the fruits down into the batter. Decorate the fruits as desired

Bake in pre-heated oven at 180degC for 50-60 minutes or until a skewer comes out clean when inserted into the cake. Cover the top with foil in the last 15 mins of baking to prevent the top from getting over browned

Leave the cake to cool in the pan for about 5~10 mins. Unmold and transfer to wire rack to let cool completely. Dust the cake with some snow powder if desired.

Espresso cream liqueur pink marbled butter cake by Geraldine Tan‎


Ingredients
240 grms unsalted butter softened
200 grams caster sugar cream together with butter
3 large eggs
210 gm self raising flour
90 gram plain flour

Method
1, Prepare 3 tsp of coffee grails dissolved in water , add 5 tbs of espresso cream liquour 
2. divide the batter into two , mix coffee mixture into half of the batter. 
3. Divide the remaing half batter again. Put few drops of food colouring into one of the half batter. 
4. Scoop the coffee mixture batter using a big spoon, then scoop the colored mixture using middle size spoon, then the last is use a small for the remaining uncolored batter. Repeat the process until all batter has been scooped into the baking loaf pan. 
5. Baked at 170 degree celsius for an hour or until knife poked into the cake comes out clean.

Ingredients A
250g Golden Churn Butter (Can)
85g sugar
1 tsp vanilla essence
1 tbsp milk
4 egg yolks
200 plain flour (sift)
1 tsp baking powder
Pinch of salt.

Ingredients B
4 egg whites
85g sugar

Method
1. Cream butter with sugar and add in essence and milk till fluffy. 
2. Add in egg yolks one at a time till well combined. 
3. Add in sifted flour, baking powder and salt. Put aside. 
4. Whip ingredients B and add into step 3. 
5. Bake at 170c 40 to 45mins.

Butter walnuts cake by Jensie Tan


Ingredients
Walnut butter cake (fruits)
250g butter
100g margarine
220g sugar (240g)
290g egg ( 8 egg)
250g plain flour
30 g carnation milk
8 g sponge gel
3 g baking powder
Vanilla essence
Walnut 40g
Banana (Otp) Plain flour with baking powder stiff


Method

1) Beat the butter , margarine , slowly add in sugar , sponge gel , till fluffy slowly add in egg one by one beat well add in vanilla Essenes

2) fold in the flour and add in the nut or fruits you like , mix well n last add in the milk

3) pour in the tin (9")greased with flour or oil)

Bake in a pre heated oven till cook n golden brown 180 degrees at 45 mins.

Chocolate Banana Bread by Ellena Guan

Ingredients
120g Unsalted Butter, soften
170g brown sugar
240g self-raising flour
2 large eggs (60g each)
1/2 teaspoon baking soda
1/2 teaspoon vanilla extract
3 Large banana, mashed (about 1 cup)
50g walnut (roughly chopped), optional
50g dark chocolate chips, optional

Method
1. Preheat oven to 180 degree, grease and flour a loaf tin (21 x 11 x 6cm).
2. Sieved flour and baking soda together and set aside. Cream butter and sugar in a large mixing bowl using hand whisk till light and pale.
3. Add one egg and a spoonful of sieved flour and whisk till combined, repeat with the other egg. Lastly stir in remaining flour till everything is mixed through.
4. Mashed banana with a fork till smooth (no lumps), add it into the flour batter together with vanilla extract and mix well.
5. Lastly stir in chocolate chips and walnut if using then pour batter into prepared in and bake in preheated oven for 50 minutes or until a skewer inserted in the centre and comes out clean.
6. Remove and stand in pan for 10 minutes before removing it to cooling rack.

*Tips: You can reserved some chocolate chips, walnut and sliced banana to decorate the top of the batter before sending it into the oven.

Almond Butter cake by Esther Tho


250g butter (semi soften)
150g fine sugar
4 eggs
160g self raising flour
1 tsp of vanilla
2 tbsp Almond powder
30-50g ground Almond
2 tbsp (30ml) of milk / whip cream
Pinch of salt
30-50g ground Almond nuts
Almond flakes to sprinkle on top.

1. Cream butter and sugar till fluffy
2. Add vanilla & add egg one at a time till creamy
3. Add in sifted flour, Almond powder & salt by 2 or 3 portion mix well
4. Add in ground Almond nuts
5. Finally add in the milk and mix well.
6. Bake in a preheated oven at 175degC for 18-20min for cup pies and 45mins for a whole cake.

Mini Rice Cooker ~ Orange Butter Cake by Katherine Lee




Ingredients:
Self raising flour 100g
Butter 80g
Sugar 40g
Eggs 2 nos
Orange juice 4 tablespoons

Method:
1) Cream butter n sugar till pale n fluffy
2) Add in egg one at a time n mix well
3) Add in sifted flour n mix well
4) Add in orange juice n mix well
5) Coat some butter on the rice cooker. Cover n cook for 45 mins or when insert a toothpick it comes out clean.


It took me 1 hour to cook this cake. Just leave it inside to cook after it turn to keep warm.

*You can bake in the multifunction rice cooker that have the function to bake. Just double up the recipe will do 😊
