Hainanese Pork Chop by Jeannie Lee


Ingredients
4 slices of pork loin
Seasoning :
1/2 tbsp light sauce
1/2 tbsp sesame oil
Pinch of pepper
1 egg - beaten
Marinate pork with seasoning for 2 hours

2 big potatoes - cut
1 big tomato - cut
1 onion - slice
1 cup breadcrumbs/cream crackers - crushed

Sauce
4 tbsp tomato ketchup
1tbsp worcestershire sauce
1tbsp HP sauce
1tbsp oyster sauce
2tbsp sugar
Pinch of salt

Method
Using the back of a knife or kitchen mallet flatten the pork loin and marinate with the seasoning.
Set aside.
Fry cut potatoes till golden brown and set aside.
In a pan, heat up some oil.
Coat each piece of pork loin with beaten egg and follow by breadcrumbs and drop slowly into the hot oil fry till golden brown and crispy.
Cut or slice pork chop into strips and set aside.
Sauté some chopped garlics in a hot pan with a little oil n fry till fragrant. Add in cutted onions n fry till a little soften. Add in sauce mixture and follow by cutted tomatoes n cook for 1 to 2 mins. Add in cooked potatoes n mix well. Prepare some cornstarch mixture to thicken the sauce.
Place cutter pork chop on serving plate n pour the cooked sauce over and serve hot.
