Mango Salsa by Vanessa Tay


1 Mango - peeled and diced
Half a Red Onion - diced finely
1-2 Tomato - diced
One chilli padi, deseed and chopped finely
* optional (I omit, due to children)
Zest of one Lime
3 tbsp of Lime Juice
1 stalk of Parsley - finely chopped
** I used English Parsley
1/2 - 1tsp Salt - your preference
Mix well and set aside in the fridge
