Grilled Chicken Caprese Pasta


If you love Italian food then this is a deluxe meal you will most definitely want to try! It is fancy, loaded with fresh goodness, creamy, hearty and beyond good! You get everything that's on your average Caprese Chicken and so much more, with the tender pasta, fire roasted tomato sauce, additional garlic (because I think they never put enough garlic in the store bought bottled spaghetti sauce, you could even add two cloves to the recipe), and yes of course the perfectly grilled chicken breast strips. This is a meal you are going to remember. If you wanted to really splurge you could even add in some cooked Pancetta or Bacon, yum! Sorry I didn't get many pictures (I wanted more pictures with the grilled chicken showing through it's kind of hidden in there), this was my families Sunday dinner and I couldn't resist that ooey gooey cheesy goodness long. It was calling my name. I looked over to my husband and the cheese was dripping clear from the fork near his mouth to the plate sitting in his lap (yeah we ate this fancy meal on the couch, not usual but once in a while its fun =). Enjoy!



Grilled Chicken Caprese Pasta
Yields about 6 servings

Ingredients:
2 medium chicken breast halves, grilled and diced into strips*
9 oz Rigatoni or Penne pasta
2 cups fire roasted tomato pasta sauce (I used Classico)
1/2 cup heavy cream
1/3 cup finely grated Romano Cheese
1 clove garlic, finely minced
red pepper flakes, to taste (optional, for added heat)
Salt and freshly ground black pepper, to taste
1 pint grape tomatoes, diced into halves
12 oz fresh mozzarella, grated**
16 fresh Basil leaves, chopped chiffonade style (mine were fairly small)

Directions:
Preheat oven to 375 degrees. Cook pasta to al dente according to directions listed on package. While pasta is boiling, in a separate medium saucepan over medium low heat, heat tomato pasta sauce, heavy cream, Romano cheese, garlic, optional red pepper flakes and season with salt and pepper to taste. Cook, stirring frequently, until cheese melts. 
Drain cooked pasta well, return pasta to pot. Add in grilled diced chicken, grape tomatoes, half of the mozzarella and half of the basil ribbons, then pour warm sauce over mixture. Toss to evenly coat. Pour mixture into a greased casserole or baking dish. Sprinkle with remaining mozzarella and cook pasta uncovered for about 20 - 25 minutes until cheese is golden. Serve warm.

*This was about 1 lb chicken. I placed the chicken in a ziploc bag then pounded each breast to an even thickness, then removed and sprayed each chicken breast lightly with olive oil cooking spray. I seasoned each side with salt, pepper and a light sprinkle of garlic powder. Then grilled them until cooked through, cut them in half thick wise (like cutting a bun), and diced them into fairly thin strips.
**I've heard some people say they have trouble grating fresh mozzarella, I had no problem with this but if you do you can freeze it for 20 minutes prior to grating. They don't need to be perfect shreds its really just to break it up.

Grilled Chicken Teriyaki Kebobs and a Great Find

Say what? Disposable bakeware! Has anyone tried these yet? I'm dying to get my hands on some. I absolutely love to cook and bake but I hate the cleanup. These things are genius. I definitely want these at the next dinner party I host. Thank you thank you Chinet for improving the world of cooking. Less stress due to less mess, yes please. I'd rather spend my time in the kitchen making delicious food rather than cleaning up after it. Bake, eat, toss, repeat =).


Feast your eyes on the perfect summer dinner. These Grilled Chicken Kebobs are so tantalizingly delicious! Tender chicken, lightly charred fruit and veggies all finished off with a generous smothering of homemade teriyaki sauce, yes these are wow good! I know the servings I listed says 4 but I might recommend 3, my husband and I each ate about 4 skewers. They were so tasty I just couldn't stop, but they're mostly veggies right? Really these are quite healthy. They are low in fat, full of fruit and veggies and a great source of lean protein from the chicken. I love when I can have a healthy meal that is so amazingly good. Healthy and yummy, it's a definite keeper. Enjoy!






Grilled Chicken Teriyaki Kebobs
Yields about 4 servings (10 Kebabs)

Ingredients:

1 1/2 lbs boneless skinless chicken breasts, diced into 1 1/2 inch pieces
2 small green bell peppers (or 1 1/2 large), diced into 1 1/2 inch pieces
2 small red bell peppers (or 1 1/2 large), diced into 1 1/2 inch pieces
1 large yellow onion, diced into 1 1/2 inch wedges
3 heaping cups fresh pineapple, diced into 1 1/2 inch chunks (and about 1/2 - 3/4 inch thick)

Marinade/glaze:
3/4 cup low sodium soy sauce
1/4 cup + 2 Tbsp apple cider vinegar
1/3 cup packed light-brown sugar
1/4 cup honey
3 Tbsp orange marmalade

1 tsp molasses
1 tbsp finely grated fresh ginger
2 cloves garlic, finely minced
1/2 tsp freshly ground black pepper
1 Tbsp cold water
2 1/2 tsp cornstarch


Directions:
In a mixing bowl, whisk together soy sauce, apple cider vinegar, light-brown sugar, honey, orange marmalade, molasses, grated ginger, garlic and pepper. Reserve 1 cup of sauce mixture in a bowl in refrigerator and pour remaining sauce over diced chicken in a large ziploc bag. Seal bag and place bag in a bowl (to prevent leaks) in refrigerator and allow chicken to marinate 4 hours in refrigerator. 
To prepare glaze, pour reserved 1 cup sauce into a small saucepan. In a small bowl, whisk together 1 Tbsp cold water and cornstarch, then pour cornstarch mixture into saucepan and stir. Bring sauce just to a boil over medium high heat, stirring frequently. Once mixture reaches a boil, reduce heat and allow to gently boil 1 minute,  stirring constantly. Remove from heat and allow to cool slightly.
To prepare kabobs, using either metal skewers or water soaked wood skewers, thread a piece of marinated chicken (discard marinade), followed by an onion wedge, a chunk of red pepper, a chunk of green pepper and a chunk of pineapple, then repeat pattern twice and finish with an additional piece of chicken (I fit 4 pieces of chicken on the kebab total then 3 of everything else).
Grill kebabs over medium heat, 12 - 16 minutes rotating once halfway through grilling, until chicken has fully cooked through. Remove from grill and brush kebabs with teriyaki sauce, serve warm with cooked white or brown rice if desired (alternately you can brush kebabs with teriyaki sauce during the last few minutes of grilling but I say why waste such good sauce that will drip to bottom of the grill).

Grilled Chicken with Balsamic Barbecue Sauce




Are you looking for a wowing and simple grilling recipe for the upcoming 4th of July celebrations? Well, I'm quite certain you've found just what you are looking for. This grilled chicken smothered in a homemade Balsamic Barbecue Sauce simply said, is incredible! It is definitely up there with my favorite grilled chicken recipes. You get a tender chicken breast grilled to perfection that's basted with a flavorful, tangy, not overly sweet sauce that will have you coming back for more. I'd say this recipe is one you most definitely are going to want to try. Don't be scared by the long list of ingredients in the sauce, most of them are pantry staples that you likely already have on hand. I hope you enjoy and have a great 4th of July! 


Grilled Chicken with Balsamic BBQ Sauce
Yields about 6 servings


Ingredients:
6 medium boneless, skinless chicken breasts halves (thighs would work great too)
Salt and pepper, to taste
Olive Oil for brushing grill
1 Recipe Balsamic Barbecue Sauce, recipe follows


Directions:
Preheat grill to medium high heat. Place chicken in a ziploc bag and somewhat gently pound chicken with the flat side of a meat mallet to an even thickness (you just don't want to destroy the chicken, that's why I say somewhat gently).  Season each side of chicken breast with salt and pepper. Brush grill lightly with olive oil. Place chicken on grill and cook (with lid closed) 5 - 8 minutes per side, until internal temperature reaches 160 degrees. Baste chicken generously with Balsamic Barbecue Sauce during the last few minutes of grilling (if you want sauce for dipping reserve some of the sauce in a separate container so you aren't contaminating sauce while basting chicken, or alternately you could heat remaining barbecue sauce over stove top to kill bacteria). Serve warm.


Balsamic Barbecue Sauce
Yields about 1 1/2 cups


Ingredients:
1/2 cup granulated sugar
2 1/2 tsp cornstarch
1/2 cup balsamic vinegar
1/4 cup water
1/4 cup apple juice
1/4 cup tomato paste
1 1/2 Tbsp molasses
1 Tbsp low sodium soy sauce
1 Tbsp Worcestershire
1 tsp liquid smoke, hickory flavor
1/2 tsp onion powder
1/2 tsp garlic powder
1/2 tsp salt, or to taste
1/4 tsp freshly ground black pepper


Directions:
In a medium saucepan, whisk together sugar and cornstarch. Stir in remaining ingredients then heat mixture just to a boil over medium high heat, stirring frequently. Once mixture reaches a boil, reduce heat to low and simmer 15-20 minutes, stirring occasionally, until sauce has thickened and slightly reduced. Remove from heat, allow to cool and store in a non-reactive, airtight container in the refrigerator up to one week.

Grilled Honey Lime Chicken


This Grilled Honey Lime Chicken is so amazing that it's likely to leave you speechless! Be sure to properly marinate and grill it, don't settle for an hour or two of marinating and follow tips listed at bottom of recipe for properly grilled chicken. In my opinion this chicken is completely phenomenal! I made this recipe because I love chicken for dinner and I wanted a new recipe to add to the rotation. This is an exciting one that I'm certain is going to be made in my home quite frequently. All of the flavors of this simple marinade blend so perfectly together and compliment the chicken amazingly well. If you have leftovers - which is unlikely, they would make an incredible filling for tacos. I hope you love this recipe!



Honey Lime Chicken
Yields about 4 servings


Ingredients:
1.5 - 2 lbs boneless skinless chicken breast halves or chicken thighs
1/4 cup fresh lime juice
2 tsp lime zest
1/4 cup honey
2 Tbsp extra virgin olive oil
1 Tbsp soy sauce
1 Tbsp packed light-brown sugar
1/2 tsp salt
1/2 tsp freshly ground black pepper
1/4 tsp onion powder
1/4 tsp garlic powder or 1 clove finely minced garlic
1/8 - 1/4 tsp cayenne pepper (optional)


Directions:
If chicken isn't an even thickness then place chicken in a large ziploc bag and seal bag. Using the flat side of a meat mallet, pound chicken to an even thickness. 
Place chicken in a non-reactive dish in a single layer. In a mixing bowl whisk together remaining ingredients. Reserve 2 Tbsp of the mixture in a non-reactive, airtight container in the refrigerator. Pour remaining mixture over the chicken, cover dish and allow to marinate 8 hours or overnight in the refrigerator. 
Preheat grill to medium high heat. Once preheated, brush grill lightly with olive oil. Place chicken on grill and cook (with lid closed) 5-8 minutes per side until juices run clear (cook time depends on the thickness of the chicken, internal temp should register to 160 when done), baste each side of chicken with reserved marinade during the last minute of cooking. For juicier chicken, plate chicken, cover with foil and allow to rest 5 minutes. Serve immediately.
Notes for better grilled chicken: don't flip chicken over and over again, it only needs to be flipped once, and if you like the cross marks as pictured you can flip it a second time during the last minute of cooking. For the mouth watering grill marks brush the grill with olive oil before cooking and then when flipping to opposite side, this also prevents sticking as well. Don't press down on chicken when grilling or poke continuously, this will release the juices and that delicious marinade. Don't overcook or chicken will be tough, for tender chicken cook until internal temperature registers at 160 degrees on an instant read thermometer. Don't lift grill lid more than necessary.
