Chashu and Tamago Miso Ramen by Tan Connie



Tamago
---------
Ingredients
3 cold large eggs
2 tbspn jap soy sauce
2 tbspn huatiowjiu
6 tbspn boiled water
2 tspn brown sugar

Steps
1. Bring a pot of water to boil.
2. When it starts to boil, lower the cold eggs with a sieve ladle very carefully into the boiling water. You may scoop some water onto the cold eggs first bef immersing. This helps it to integrate into the boiling water better.
3. Once immersed, time it 7 mins.
4. Remove the eggs from pot and gently transfer to a cold/ice cubes bath in a bigger bowl. Let it sit for 3mins covered with ice.
4. After 3mins, remove and cracked the eggs all over. Start to peel very very gently as it is still wobbly.
5. After peeling clean, immerse this eggs into a ziplock bag mixed with above seasoning.
6. Marinate a few hours or overnite in fridge, till ready for use.

Note: I hv attempted both cold n room temp eggs with same timings. The cold eggs yield a more runny texture when cut. Pls take note.



Chashu
--------
Ingredients
1 block of pork belly(i use instead 五 花 肉 with some fatty parts)
1 tsp salt
Some sliced ginger
Some scallions/green onions (cut in sections)
Some oil

Seasoning
2/3 cup water1/3 cup huatiowjiu/sake
1/3 cup jap soy sauce
3 tbspn brown sugar

Steps
1. Rinse the meat n pat dry. Rub some salt on the meat.
2. Heat some oil in skillet/ss pot over high heat n brown the fat side first, then flip over to brown the other side.
3. After browning for abt 10mins, transfer this meat into a small slow cooker. Place green onions n ginger on the base of pot with meat on top.
4. Pour the mixed seasonings over the pc of meat. Let it slow cook n braise for abt an hr.
5. Intermittently, rotate the meat every 15mins to ensure all sides r infused with the seasonings.
6. After one hr, transfer the pc of meat back to the skillet/ss pot with all the seasonings.
7. Use a silicone tong n start to caramelize the meat all over. Do it till the liquid almost dry up n same time ensuring the meat do not get burnt.
8. Leave the meat to cool before slicing thin or your desired thickness.
9. You may use a blowtorch to brown the top bef serving but is a optional step.

Note
1. I hv chosen to use a slow cooker to slowly infuse n lock in the flavour of the meat but it does not caramelize it. This has to be continued in a ss pot to caramelize till all the bal liquid are used up.
2. Do estimate the amount of seasonings based on the size of pork used too.



Recipe for miso broth------------------------

Ingredients
Pork bones
Garlic cloves

A heaped spoonful of minced ginger/shallots/garlics
1 tbspn sesame seeds
Sesame oil
3 tbspn miso paste
1 tbspn brown sugar
1 tbspn sake/huatiowjiu
4 cups(abt 1litre) pork bones stock/broth
Salt/pepper to taste
A small pc of chicken cube

Some scallions/green onions
Sheets of roasted seaweed

Steps
1. Blanch the pork bones until clean. Boil it in a big pot of water with some garlic cloves.
2. Sieve out the scum while boiling.
3. Leave to cool aside once boiled.

4. In another pot, saute the minced ingredients till fragrant.
5. Add the miso paste n fry evenly. Add the sesame seeds with the rest of seasoning to taste except sugar.
6. Once even, add a cup of sieved pork bone stock. Let it simmer slightly. You may add sugar n chicken cube now to balance the taste. Then add more pork bone stock. Bring to a boil.
7. Off heat, serve when fresh ramen noodles r ready.
8. Serve hot n top with some chashu, tamago eggs. Garnish with some chopped scallions n roasted seaweed.

Collagen by Linda Hsu


Ingredients

1 pack of big pork bones
1 pack of chicken bones
1 pack of chicken feet

Preparation

Clip off chicken feet nails
Remove excess skin from chicken

To a pot add water to boil
Put all in to rolling boil for about 2 mins
Remove scum
Pour away water
Rinse ingredients if needed
Put all back to pot with new water that's 1 inch above the top of bones
Boil on high heat till there's rolling boil for about 2 mins
Remove scum along the way
Lower heat to simmer for 6-8 hours
Pour liquid to different pots for faster cooling down
Store in fridge overnight
Next day you'll get jello-collagen goodness!!
Leave some in fridge for the next few days' consumption and freeze the rest

I didn't add salt or vegetables as I use this a base for cooking everything. The jello turns to liquid upon heating up. Add a frozen cube or two of collagen to the cooking instead of water. I usually finish the whole batch within 2 months.

Lotus Root Soup by Joyce Lim Pc


Ingredients

Lotus Roots x 1 (sliced thinly)
Tail Bone x 1 (approx $4.50)
One handful of peanuts
Big Red Dates x 2 (removed seed)

Method

Soak the peanuts in a bowl of hot water and remove the skin
Rub some salt to tail bone and wash with running water
Put the tail bone into a pot of boiling water
Remove when is partially cook

Pour half a pot of boiling water into the slow cooker
Cook the lotus roots till it is boiling
Place the skinless peanuts, red dates and tail bone into the boiling soup.
Let is slow cook for approx 2hrs..
Ready to serve.

Mushrooms soup by Lee Siew Lay


Serves 6-8 bowls 

Ingredients
350g of Portobello mushrooms
250g of Swiss brown mushrooms
2 tbsp of butter
1 big onion
1 cup of heavy cream ( about 250g)
5 tbsp of plain flour
1 liter of water with 2 chicken stock cube
Dashes of salt and pepper
Chopped parsley

Steps
- cut mushrooms and onion into small pieces. Stir fry both together with the butter for 5 min.
- add in the chicken stock soup and boiled for another 10min in a pot.
- transfer from pot to a blender. Blend till fine.
- transfer the blended soup back to the pot and add in the heavy cream to boil.
- add in half cup of water to the plain flour and pour slowly into the pot.
- bring to boil over slow fire. Serve hot with dashes of pepper and salt. Garnish with parsley before serving. 

Enjoy with bread or biscuits!

5mins egg-drop soup by Christine Tan


Ingredients
2 cups water
1 cup of chicken broth (any brand u prefer)
2 thin slices of ginger
1 & 1/2 teaspoon of corn starch
(Mix well with some water and set aside)
Dash of pepper
1 egg
1/2 teaspoon of sesame oil (we like the sesame aroma..u can omit if u dun like it)

Method
Add water..ginger slices and chicken broth into the pot
Add in the mixed corn starch mixture and stir well
Let it boil and add the beaten egg into the pot
Stir gently in circulate motion
Once u see it boiling..(infact less than 2mins)
Off fire add in sesame oil and serve
Garnish with pepper and chopped spring onions

Chicken Soup by Christine Tan


Ingredients
2 chicken thighs (cut half)
3 chicken drumsticks (cut half)
3 big bowls of water
4 small potatoes (peeled & chopped bite size)
1 teaspoon sesame oil
2 thin slices of ginger

Shabu shoulder pork (250gm) add only once the above ingredients are fully cooked
6 prawns (add this last)

Method
Add all ingredients in the boiling water (except shoulder pork and prawns)..
When potatoes and chicken are cooked..add in shabu shoulder pork and cook for 10mins...off fire and add in prawns. Cover lid for 3mins and serve hot.

Herbal fish soup with mee suah by Lilian Liong



1) In the inner pot, add sesame oil and ginger. Cook till fragrant.
2) Add water and bring it to a boil.
3) Add the rest of the ingredients except the fish (pls see note below).
4) Add Chinese cooking wine and oyster sauce.
5) Let it cook for about 15 minutes over medium heat.
6) Cover the lid and put the inner pot into the Thermos.

Note
- The fish I used was grouper but it turned a tad too dry when I ate it, so I would recommend to either try cod fish due to its high oily content or add the fish in the morning.

Double Boiled black chicken soup by Jean Chua



Ingredients
=========
4 cut pieces sea cucumber
5 pieces fish maw (NOT the deep fried type)
One small black chicken
Shanghainese Suikow skin
7 red dates
2 tsp Wolfberries

Sea cucumber processed from dry and kept whole piece in freezer for use anytime.

For this dish, both fish maw and sea cucumber are given a quick boil with spring onions, a few slices of old ginger and 2 tsp of Hua Tiao Chew. After 5 mins throw away water and rinse.

Black chicken dumplings
===================
Use one side of breast meat for dumplings.

1. Mince the meat till fine. Add 1 finely chopped water chestnuts and 2 tsps of ground deep fried sole fish
2. Season with salt and pepper, 2 tsps of Wincarnis ginger wine and half tsp of cornflour mixed with 1 tsp of water and some chopped white part of spring onions.
3. Mix above together and make 4 dumplings.
4. Steam the dumplings for 5 minutes and set aside.

For the Soup
==========
Total double-boiling time - one hour

1. Boil chicken and bones in hot water for 5 mins. Discard water and rinse off scum
2. Boil another pot of water - 500 ml - and add in chicken, bones and sea cucumber and Himalayan salt to taste.
3. After 10 minutes, transfer all to a porcelain pot, putting the bones at the bottom. Add sea cucumber & 7 red dates. Cover porcelain pot.
4. Place the porcelain pot into another stainless steel pot of boiling water for double boiling and cover the pot.
5. After 30 minutes of double boiling, add the fish maw.
6. At the 55th minute, add the Wolfberries and the cooked dumplings and continue to complete the cooking for another 5 minutes.
7. Scoop out everything except chicken bones and serve in a bowl . Garnish with coriander leaves.
8. Julienne finely fresh ginger and add black vinegar as a dip for the dumplings.

Chicken soup with herbal goodness by Tan Connie


Ingredients
One packet of herbal ready-pack for dun ji tang
2pcs chicken thighs (deboned n skin removed)
A handful of wolfberries
Salt to taste
A pot of water

Steps
1. Rinse n slightly blanch the chicken thighs.
2. Heat up the double boiler. When water boils, lay the rinsed herbs at bottom of pot. Put the chicken pcs on top.
3. Double boil for at least 1-1/2hrs at medium heat.
4. When chicken soup is almost ready, add a handful of wolfberries.
5. Add some salt to taste.
6. Serve hot.

Double boiled Sharkfin Melon soup by Jeannie Lee


Ingredients
1 Med size Sharkfin melon
Half kg Pork ribs (blanch with hot water)
2 lites of water

6 dried scallops (wash n soak in some hot water)
10pcs of red dates (wash)
handful of Wolfberries (wash)
handful of Cordpyces (wash)
Dash of salt

Stock
To make stock, bring 2 litres of water to boil and add in pork ribs. Simmer over low heat to the stock.

Preparation of Melon:

Stand melon on a flat surface.
Cut the top of the melon about slightly 1/4 in height.
Scoop out seeds and pulp till wall about one inch thick.
Discard the seeds and pulp.
In a big pot, put in some boiling water and a steam rack.
Place a heat proof dish on top of the steam rack.
Place melon on the heat proof dish.
Add in all the ingredients and follow by the prepared pork ribs stock.
Close the melon with the cutted melon top.
Steam for about 1hour on low heat.
To serve, add a dash of salt into the cooked melon.
Place cooked melon on a serving plate before serve.

Lotus Seed and White Fungus Chicken Soup by Wan Jing

Ingredients
- 400g Chicken (I'm using 2 drumstick)
- 40 to 50g Dried Lotus Seed
- 1 Dried White Fungus
- 4 to 5 red dates
- Handful of Goji Berry
- about 1.2 to 1.5L water (if you do not like thicken soup add more water, cos fungus will release collagen)
- Salt to taste

Steps
- Soak White Fungus and lotus seed for 1hr.
- Put chicken and all ingredients (except salt) into double boiler and boil for at least 2 hours.
- Add salt to taste before serving.

Doubled boiled herbal black chicken soup by Linda Ling


Served 2paxs

What you need 1/2 Black chicken with skin removed
1200ml hot water
1/2 pack of chicken herbal soup ingredients
8 small japanese Dry scallops ( the ones I used r small ones)
4-5 pcs Red dates
4-5 Pcs dry longan
1 tablespoon wolfberries

Method
Slightly blanch it with hot water. Cut into small size to fit into your pot.

Wash all the ingredients, put into the prepared pot for dlb boiling. Pour in hot water and cover with the lid.

Use low flame to dlb boil for 3-4hrs.
I didn't add in any seasonings for this soup.

Note
I used claypot for double boiling.
I used traditional method Where I lay a piece of cloth beneath a wok and dlb boil my soup in it.

Double-boiled Tea Tree Mushroom, Longan and Chicken Soup by Jessie Koey


Ingredients
- About 50g tea tree mushroom (I bought fr Chinese Medical shop)
- About 50g dried longans
- 100g white fungus
- 1 spring chicken (abt 600-700g)
- 20g ginger
- 10g sweet n bitter almond
- 200g pork ribs, 10 red dates
- Salt to taste

Method
1) Cut spring chicken into 4 pcs n blanch with pork ribs. Drain n leave aside
2) Soak white fungus n tea tree mushrooms for abt 2 hrs. Cut into pieces
3) Bring a pot of water (abt 2 litre) to boil. Add tea tree mushroom, longan, fungus, spring chicken, pork ribs, ginger n red dates. Bring to a boil.
4) Lower the heat and simmer for 2 hours. Add almond n salt to taste. Bring to boil for 10 mins. Serve.
(Tea tree mushrooms can help to enhance metabolism. Longan can help to soothe the lungs). Happy trying everyone.

Persimmon Pork Loin Soup by Wan Jing‎


Ingredients
- 1 or 2 Dried Persimmon (柿饼)depending on your preference on the soup sweetness and size of your persimmon.
- 4 to 5 Red dates
- 1 carrot (cubed)
- 200-300g meat (Pork rib/ Loin/ Chicken)
- 1 tbsp goji berry
- About 1 litre water

Steps
- Blanch meat in boiling water
- Put everything into the double boiler and bring to boil for at least 2-3 hours.
- You may add Salt to taste before serve (own preference).

~ If you like it to be more flavorful you may also add some dried scallop. Otherwise this soup has natural sweetness from all the ingredients.

Double-Boiled Coconut Chicken Soup by Tammy Tng‎


Ingredients
(serves 2)

2 young coconuts
2 chicken drumsticks or wings (blanched in hot water)
3 parts chicken stock + 1 part coconut water (sufficient to fill the coconut)
2 red dates
2 Chinese mushroom (soaked and squeezed out excess water)
Small piece of snow fungus (soaked, cut into bite-sized)
1 tbsp wolfberries

Method
1) Crack open the top portion of the young coconut and drain the coconut water into a bowl. Keep some for making the soup. You can either scrape some coconut flesh and cook them in the soup, or leave the flesh intact.

2) Fill each coconut shell with a small piece of chicken, red date, mushroom, snow fungus and top up with chicken stock + coconut water. Cover with coconut lid.

3) Steam over high heat for 30 minutes. Add salt to taste (I didn't add as store bought chicken soup usually has salt in it alr) and wolfberries. Steam for another 5 minutes and serve hot.

Double-boiled Chrysanthemum Chicken soup by Jessie Koey‎


Ingredients
20-30g dried chrysanthemum flower(put into a small soup sachet)
1 spring chicken (dun cut-remove fats ) (scalded with hot water)
5 chicken feet
4 pcs danggui
2-3 big honey dates, 7 red dates
white fungus - 50g soaked
adequate salt to taste

Method
1, Bring a pot of water (abt 1.5-2 litre) to a boil. Add chrysanthemum, danggui, honey n red dates, chicken feet , spring chicken n white fungus. Bring to boil.
2. Lower the heat and simmer for 11/2 hours. Add salt to taste. Serve hot.

ABC soup by Siow Ling Puah


Ingredients
300g pork
2 tomatoes (quartered)
2 medium potatoes (cut into chunks)
2 large onions (cut into wedges)
1 large carrot (cut into chunks)
1 medium pumpkin (cut into chunks)
1-2 sweet corns (husked and cut into 3-4 chunks)
6-8 red dates
Handful of goji
A small piece of preserved vegetable “Zha Cai” – (榨菜)
2.5 litres water
Salt to taste

Optional
– 4-6 dried scallops
– 4-6 dried oysters

Method
1. Par-boil pork ribs.
2.Clean the par-boiled pork ribs under running water.
3.Quarter and/or cut the ingredients : carrots, sweet corn, pumpkins, onions, potatoes, tomatoes, and preserved vegetable “Zha Cai”.
4.Bring 2500ml of water to boil in a big pot.
5.Once the water boils, add in the pork ribs, carrots, onions, potatoes, tomatoes, sweet corns, pumpkins, red dates, goji, dried scallops & oysters, preserved vegetable “Zha Cai” to boil for 10 minutes.
6.Bring the flame down and boil the soup for at least 2 hours. To check the water level from time to time and add some hot water if the water is drying out fast.
7.Season the soup with salt.

Onion with bacon & potato soup by Christine Tan



Ingredients
5 small potatoes..peeled and dice
1 big yellow onion dice
3 tablespoon salted butter
Salt & pepper to taste
2 pcs of cheese (I use cheddar cheese bought from ntuc)
4-5 slices of back bacon (chopped small pcs)
1 cup chicken broth
180ml of whip cream (Emborg brand)
300ml full cream milk (i used Meiji brand.. fyi..Dutch lady is good too)
500ml water

Method
Heat pan.. add 2 tablespoon of oil..stir fry back bacon till golden brown and crispy (set aside)

Use a big pot (i used happycall pot-biggest pot)
Add 2 tablespoon of oil and butter
Stir fry the onion till about 60% cooked

Add in chicken broth..milk .. whip cream and water..then let it cook till boil (keep stirring gently)
Add in potato dice .. let it simmer with medium big fire

When potatoes are cooked soften..add in the cheddar cheese..salt and pepper to taste (Note: add in the salt moderately)

Lastly..off the fire and throw in the golden crispy bacon..stir well and garnish with some shallots and serve hot😁
Enjoy.

P/s tips: i stood right in front of my pot as i cooked this soup..dO nOT totally cover the lid and walk away else u will see the magic cooking pot brewing bubbles out from the pot.. gently and patiently stir it..else open the lid and stir it once in a while to ensure potatoes are cooked evenly).
