Pork Ribs with Champagne Sauce by Mock Hk


Ingredients
300g pork spare ribs
1 tsp salt
1 tsp sugar
1 tsp light soy sauce
½ tsp dark soy sauce
1 tbsp oyster sauce
1 tbsp huadiao wine
2pcs star anise and cinnamon
1 tsp pepper
Adequate water
50g flour

Champagne Sauce
50ml lemon juice
100g sugar
50ml champagne
50ml sprite
1 tsp salt

1. Marinate the spare ribs with salt, sugar, soy sauce, oyster sauce, huadiao wine, star anise, cinnamon and pepper for at least 30 mins to 2 hours.
2. Coat the pork ribs with flour and deep fry in boiling oil until golden brown and drain.
3. In another pan, cook the champagne sauce on low heat till it turns brown.
4. Add pork ribs and cook with the sauce till it thickens. Ready to serve.
