Vegetables Soup by Joey Ng

 
Ingredients:
Lotus root, white radish, carrots, sweet corn, celery, button mushroom.
 
Method:
Sauté chopped garlic n ginger n onion with olive oil till fragrant in the pot, put in the mushroom n a cube of chicken stock and stir fry and then add in the rest of the ingredients and pour water to fill the pot to 3/4. I added some jap mirin too. Then bring to boil for 15mins and lower heat and simmer for an hr or so. you can put in thermo pot too as tats wat I do.
