Yam Ring by Mock Hk


Ingredients
200~250g yam slices
3 tbsb wheat starch
½ tsp salt
½ tbsp sugar
1/8 tsp five-spice powder
1 tbsp shortening
¼ boiling water

Method
1. Pour boiling water into wheat starch, cover for 2 mins and knead well.
2. Steam yam slices for 20 mins till soft, press and knead into a paste.
3. Combine wheat starch dough, yam paste and other ingredients, knead till combined.
4. Mould it into ring-shape and put it onto a non-stick wok, deep-fry till golden (oil must be very hot and cover the whole ring). Drain oil and put the ring on a serving plate.

Fillings
2 cloves garlic (sliced)
5 pieces dried chilli
200g shrimps (shelled)
¼ cup red, green or yellow capsicum (cut into bite size)
½ cup white onion (cut into bite size)
¼ cup cashew nuts

Sauce
2 tbsp Thai chilli sauce
½ tbsp tomato sauce
2 tbsp oyster sauce
3 tsp sugar
1 tsp corn flour (make a solution with ¼ cup water)

Method
1. Heat wok with 2 tbsp oil, fry garlic and dried chilli for ½ minute. Add shrimps and other ingredients, stir-fry till cooked.
2. Add sauce and stir well, dish into yam ring.

I have added snow pea and baby corn so that I have more ingredients in the yam ring. Enjoy cooking
