Braised Chicken by Yvonne Leong
Ingredients
1) 2 tbsp sesame oil...
2) 1 chicken breast, 1 thigh and some mid joints
3) 1 carrot
4) 10 shiitake mushroom
5) 4 slices of ginger
6) 4 garlic cloves (remove the skin)
7) 3/4 bowl of water
8) some small size rock sugar
Seasonings
1) 2 tbsp of oyster sauce
2) pepper
3) corn starch
Method:
1) Season the chicken meat for at least 1/2 an hour
2) Heat sesame oil in wok. Throw in the ginger & garlic. Then add chicken. Stir fry for about 2 mins.
3) Add carrots, mushroom, rock sugar and water. Stir to mix well.
4) Add in dark soya sauce. Stir to mix well. If you want more gravy to eat with hot rice, add in some water. Not too much.
5) Simmer with lid closed until the chicken is cooked.
