Chilli Chocolate Donuts by Vanessa Wong

Dough:
- 2 large eggs, room temperature...
- 2/3 cup (165 grams) granulated white sugar
- 1 1/2 teaspoons pure vanilla extract
- 3 cups (390 grams) plain flour
- 3 teaspoons baking powder
- 1/2 teaspoon salt
- 3/4 teaspoon freshly grated nutmeg
- 3 tablespoons (40 grams) unsalted butter, melted and cooled to lukewarm
- 1/2 cup (120 ml) milk, room temperature

Chocolate Glaze:

- 120g semi sweet chocolate
- 1/2 cup (120 ml) half-and-half cream or light cream
- 1 tablespoon (13 g) butter
- 1/2 teaspoon pure vanilla extract
- 2 cups (240 grams) confectioners sugar (powdered or icing sugar), sifted
- 1/4 cup (60g) maggi chilli sauce

Dough making;
1. Beat the egg and granulated white sugar together till the mixture turn very light yellow.
2. Pour in the pure vanilla extract and mix well.
2. Add in the all the dry ingredients(plain flour, baking powder, salt and nutmeg) in a big bowl. Put aside.
3. Pour in the melted unsalted butter, milk and dry ingredients in 3 parts. And mix well. The dough should be sticky. Don worry, u r doing the right thing.
4. Cover the dough with food wrapped and leave it for abt 30mins.
5. The dough will set and would not be so sticky. You can use two size of circle cookies cutter to cut out the dount shape or use dount cutter. U can make abt 15nos.
6. Deep fry the doughunts in the cooking oil of190 degrees C. Carefully place the doughnuts into the hot oil, about 2 to 3 at a time depending on the size of your saucepan (do not over crowd). Fry each side until golden brown, about 60 seconds per side. The doughnut holes will only take about 30 seconds per side. Carefully remove the doughnuts from the hot fat with the end of a wooden spoon, tongs, slotted spoon or bamboo chopstick. Place on a baking sheet lined with clean paper towels. Let the oil return to 190 degrees C before adding more doughnuts. After the doughnuts have cooled about a minutes or two, you can roll them in granulated white sugar. Or let cool completely and then dust with powdered sugar or dip in the chilli chocolate glaze (with sea salt, preferred).

Chilli Chocolate glaze:

1. Heat the cream, chocolate and melted butter in a pot till all ingredients melted.
2. Pour in the chilli sauce and the icing sugar and mix well.

Ps: Pls ensure your doughnuts have cool down before dipping the chilli chocolate glaze. (double dipping preferred)
