Ayam Pongteh - Nyonya chicken stewed by Eileen Kou



Ingredients:
- 1/2 chicken, cut into pieces
- 2 large potatoes, peeled and quartered...
- 3 Chinese mushrooms (soaked)
- 18 shallots, peeled & finely pounded
- 8 garlic clove, peeled & finely pounded
- 2 tbsp fermented soya bean paste (crushed)
- 20g gula melaka/palm suga

Marinate chicken for 1 hour:
- 1 tsp light soy sauce
- 1 tsp sugar
- 2 tbsp oil
- 1/2 tsp salt & pepper

Seasoning:
- 1 tbsp light soy sauce
- 1 tbsp dark soya sauce
- Some pepper

Method:
1) Heat oil over medium heat. Sauté shallots & garlic until fragrant. Add crushed fermented soya bean paste and mix well.
2) Add in potatoes, mushrooms, seasoning, 500ml water & bring to boil. Cover with lid and simmer for 5 mins.
3) Add chicken and gula melaka/palm sugar. Stir occasionally.
4) Reduce the heat and simmer for 45mins - 1 hour or until the chicken is tender.
