Clay pot Beer Chicken by Evelyn Lim

Ingredients
1 onion
2 potatoes
1 carrot
Ginger 2-3 pcs
2 chicken drumstick
2 cans beer @any brand
1 tbsp wolfberries

Seasoning
A pinch of salt
1 tbsp oyster sauce
Dash of white pepper
1table spoon ginger juice

Step
(1) chicken Thigh chop into small pcs, marinate with the seasoning for 30 to 1 hr
(2) cut onion, potatoes & carrot into pcs
(3) heat wok with 1 tablespoon oil fry chicken thigh briefing, scoop put aside.
(4) heat 1 tablespoon oil in clay pot,stir fry onion n ginger till fragrance, add potatoes
carrot continue stir fry for 3 minutes, add beer bring to boil over high heat for 5
minutes. Then add chicken thigh bring to boil again. Lower heat n simmer for abt
15-20 minutes.
(5) add wolfberries.
(6) Last, add 1tsp light soya sauce to taste, this may vary depends on your taste.
Note: No water to be added.
