Mussels by Daphne Tan
Ingredients:
1. One pre pack packet of tomyam fresh ingredient from supermarket
2. 2 tbsp of Tom yam paste
3. 2 tbsp of evaporated milk
4. Two packets of fresh mussels from supermarket( I got mine from Sheng Siong as the mussel meats are bigger inside, tried nTUC ones before, very small meat pieces), soaked in water for 15mins, remove the dirt and repeat 2 times, discard unopened ones
5. Half pot of water
Cooking methods:
1. Boil one half pot of water
2. Add the prepack Tom yam fresh ingredients to boil (include galangal, onion, lemongrass, green chilli padi, lime juice)
3. Add Tom yam paste and stir well
4. Add evaporated milk and stir well while boiling
5. Let it boil for 5 mins more
6. Add mussels and simmer for 2 mins, don't over cook them else taste rubbery
7. Serve hot
Brussels sprout restaurant serves with thick fries. I like to have it with rice or garlic bread too.
