Jackfruit Glutinous Rice by Josephine Toh


Ingredients:
- Jackfruit: 300g (remove seeds), ripe jackfruit is the best.
- Glutinous rice: 300g
- Coconut milk: 20g
- Salt, sugar, cornstarch, fresh coconut fiber
- Roasted peanuts.

Method:
- clean rice by soaking 6-8hrs then drain and mix with a little salt then boil
- Coconut milk boil with a little cornstarch, salt, sugar until thick.
- jackfruit seeded, split into two half with a knife. Use a small spoon put rice in, add a little coconut milk, coconut fiber and add roasted peanuts sprinkled on top and enjoy.
