Char Siew by Linda Lau

Ingredients:

1) 500-600g of 五花肉

Marinate with
1) 2 tablespoon of soya bean paste
2) 2 tablespoon of oyster sauce
3) 5 tablespoon of soya sauce
4) 2 tablespoon of dark soya sauce
5) 2 tablespoon of brown sugar ( can use honey 2 tablespoon
6) 1 tablespoon sesame oil
7) 2-3 dash of pepper
8) 3 tablespoon of shaoxing wine
I marinate overnight

Cooking methods

1) put the char siew & sauce in a wok, ate 2 litres of water with one tablespoon of corn or tapioca flour to thicken while cooking,
braised in low heat, turn constantly to ensure all side cook & no burn...
Cook for an hr
If the water decrease, ate water until is cooked...
After an hr, the gravy should be about a rice bowl...
Transfer to the oven to grill for 5-10 mins each side... If the char siew has abit of burn on certain side, is ok aldy.
Cool down then cut in slice
Sauce for dipping (optional )
