Tiger Prawns with Ketchup Sauce by Shileen Ng


Tiger prawns abt 17pieces
Marinate w sugar, salt n pepper
Tap dry the prawns and drizzle a little corn flour
Heat up the oil ( more oil n must be v hot )
Throw in the prawns. Depending on size of the prawns.. Abt 80% cooked will do. Den bring out..

Sauce:
Garlic
Big onion
Ginger chilli strip
Spring onion
Tomato sauce
Chilli sauce

Use back the oil (remove till left juz nice for the spices.
I always fry onion first, till a little brownish or fragrance, put aside of the wok, fry the ginger till golden brown, put aside of the wok den the garlic.. Den mix all in.
Pour in tomato sauce and chilli sauce (Agar agar..)
It's abt 1:4
More tomato and less chilli sauce.
Add in some water..
Sprinkle some sugar throw in spring onion, chilli strip n prawns. Not too long.. Juz to coat the prawns w the sauce den serve..
