Baked Salmon Rice by Kelly Pang


Ingredients:
Salmon fillet
2 cups of cooked rice (cook before hand so rice is not as wet)
1 carrot - dice
2 tbsp garlic - chopped
3 eggs - beaten
Mozzarella cheese
Parmesan cheese
1 tsp Chicken stock powder

Sauce:
Mix mentaiko roe with Japanese mayonnaise OR
Ready mentaiyaki Sauce in bottle

To cook:
1. Pan fry both sides of salmon with little oil. ( dun have to be fully cook) Then use a fork to press lightly to make them into flakes. Set aside.
2. Leave the oil & fry garlic till lightly brown. Add carrot, fry till soft.
3. Add cooked rice, keep frying to dry up rice grains.
4. Make a hole in the center of rice. Add 1 tbsp of oil. Pour in beaten egg. Dun mix immediately. Let it set a little before mixing with rice. Make sure all rice grains covered with egg. Add some salt to taste. I added a tsp of chicken stock powder.
5. Scoop rice into baking dish.
6. Place Salmon flakes on top of fried rice.
7. Add Parmesan, follow by mozzarella cheese all over salmon.
8. Add mentaiko sauce over.
9. Put to grill for 10-12mins. If cheese is not brown, can grill another few mins, depends on oven.
